Recipe: Lazy Muffins

In our attempt to constantly update :) We are sharing our Lazy muffin recipe with you guys.
Have received many emails with people seeking us for recipes and here we are sharing with you guys.
Called them lazy muffins as they are almost fool proof and easy to make. :D
They don't even need a stand mixer to make, i simply used my 'Daiso' whisk given to me by a friend and a random bowl at home :)
You can always tweak the recipe if they don't work out sweet enough or chocolatey enough for you.
This time round, i made chocolate muffins, as i had Hersheys Chocolate chips leftover from baking cookies for my mum and lil sister's cravings.
Basic Muffin Base
Makes 11-12 Regular Muffins
- 2 CUPS SELF RAISING FLOUR
- 1.5 CUP CASTER SUGAR
- 1 EGG, Beaten
- 1/2 CUP OIL
- 1/4 CUP MILK
- 1/2 TEASPOON VANILLA ESSENCE
- Any flavoring of your choice (Look below for my suggestions)
Methods:
1) Place all ingredients in a bowl
2) Mix until just combined (please don't overmix)
3) Bake at 180 C, 15 to 20 mins
Thats all! Looks simple and is really simple to make.
So i was saying i gave you some suggestions to flavors you can make right. So here goes,
Apple Cinnamon: Add 1/2 teaspoon of cinnamon and a slice of apple in each muffin
Double Chocolate: Add 1 teaspoon of Chocolate powder, and 1/2 cup of choc chips.
Vanilla Blueberry: Add blueberry in the batter, Fold in, don't over mix
Banana Chocolate: Add 1 teaspoon of Chocolate powder and a slice of banana into muffin cups
